There is a simple mnemonic that explains it:
"EVERY TEQUILA IS A MEZCAL, BUT NOT EVERY MEZCAL IS A TEQUILA"
Mezcals are agave spirits that are made and bottled in Mexico. If mezcals use not only agave, but also foreign sugar, for example, in the production, then these distillates are called 'Mixtos'.
Various cooking processes can be used to extract the juice from the agave. The agave hearts are often smoked in holes in the ground, which creates the typical smoky taste in mezcal. Cooking the *Pinas*, as the agave hearts are called in Mexico, is the process mostly used for tequila. There is no smoke aroma here.
Tequila, as part of this group, has strict guidelines regarding the raw material and the region of origin.
